Bake Days - Perfect Pancakes

I love cooking pancakes on a Saturday morning as a treat but only really mastered making the perfect round pancakes the last few months. I thought id share with so you can make them yourself. (If you don't know how already)


For the pancake mix you'll need -

600g plain flour
3 x 15ml tablespoons of baking powder
2 teaspoons bicarbonate of soda
pinch of salt
40g vanilla or caster sugar
Mix all the ingredients together and store in a jar.

To make the batter and the pancakes you'll need -

150g pancake mix and add and whisk together the following
1 egg
250mls of soya milk or full fat milk (which ever your preference)
1 teaspoon of vegetable oil


Heat a non stick pan on medium heat and add the oil. If you drop a tiny bit of the batter mix into the pan and it bubbles its ready. Using a 1/4 cup of the batter pour into the middle of the pan, making sure you pour in one area of the pan.


You can have them plain with butter/maple syrup etc but i love adding chocolate chips which my little sister Tilly-Bluebell approves when she comes to stay. 



Now once the pancake starts to form small bubbles this is the time to flip them over. Be careful when doing this that you flip straight over into the pan. When i first did this i didn't leave the batter to form and flipped to early. This meant the batter went everywhere and no perfect pancake ha!

The pancakes usually take 2-3 mins each side to cook but just keep an eye on them. This amount of batter makes around 8-10 pancakes depending on how big you do them.These were the perfect size for the perfect pancakes! Takes around 15 mins to cook the whole batch.

  4. so fun to see your kitchen L! yummy recipe, my grandparents like to put apples in their pancakes and it is quite sweet and yummy. we don't measure by grams here and i want to look up the conversion. :)
