Easter Weekend!

Happy Easter everyone!

This weekend has been a busy one and I'm not happy with myself that I've left it this late to do my post. *sad face* I've had a lovely weekend with Paul and Sookie, today we had a bit of a lazy day at home. I cooked a veggie roast dinner with the yummiest yorkshire puddings ever! I have to say there the best ones I've cooked if I don't say so myself haha! 
To anyone (mainly my American friends) that doesn't know what a yorkshire pudding is, its a mixture made of eggs, flour and milk with a pinch of salt. Its then poured into a 12 hole muffin tin that has a small amount of hot sunflower oil, you then pour the mix into each hole and cook for 40 mins. They taste amazing and a Sunday roast wouldn't be the same without them!

Bake Days - Gluten Free Chocolate Crisps Cakes

Everyone makes crispy cakes every Easter right?! I thought I'd use gluten free cereal instead of the usual Coco Pops. 

Here's what you'll need -

300g milk chocolate
gluten free chocolate cereal
mini eggs
mini cream eggs
cupcake cases of your choice
a muffin tin

1. Break up your chocolate and place in bowl over boiling water. Melt the chocolate and stir until its smooth.
2. Place your chosen cereal into a bowl and add the melt chocolate, stir until all is combined.
3. Now get your muffin tin and line with the cupcake cases, spoon each case with 2 teaspoons. Make sure all cases are filled, making a little hole in the middle.
4. Add a mini cream egg in the middle of each crispy cake, then add 3 mini eggs (see picture)
5. Sprinkle with edible glitter and leave to set for 1 hour. Ta da!

Pinterest Weekly - Craft Finds

Hello dears!

As Easter is here this weekend I have gathered some of my favourite DIY's I've found on Pinterest. Now the plan for this week was for me to make a few I liked, but I just didn't have the time to get my supplies *sad face*. I do plan to make chocolate crispy cakes this afternoon, who doesn't love a Easter themed crispy cake?! :)

I have to say my favourite out of all of the ones I've choose is the paper bag masks. I know my little sister Tilly-Bluebell would love these to play with.

Yesterday I visited my family and I had a wonderful time seeing all the kids Easter crafts they've been doing at school/nursery. Josh came 1st and Daisy came 2nd for their decorative eggs which were amazing! Paul and I's don't have much planned for this weekend but I did go food shopping this morning for a veggie roast dinner on Sunday. Looking forward to having that and eating an Easter egg or two.

In The Kitchen - Coconut Curried Quorn Chicken

Hello loves!

I thought I'd share with you a recipe that I love to cook and its a favourite of Paul's. We don't eat meat (we eat fish every now and again) so you can use any meat you like if you prefer.

What you need -
4oz butter
2 finely chopped onions
2 finely chopped garlic cloves
2 tbsp chopped fresh ginger
2 tbsp curry powder
1oz plain flour
6fl oz veggie stock
400ml canned coconut milk
250ml coconut cream
1 pack of quorn chicken (not the frozen kind)
white rice (i use Tilda everyday rice)





1. Heat the butter in a pan on low heat and gently fry the onions, garlic and ginger until softed. Stir in the curry powder and flour, cook for 5 minutes.
2. Pour in the veggie stock and coconut milk and cook for about 10 minutes until the mixture thickens, then you need to strain through a sieve. Dont throw away the sauce as you'll need that in a sec. Put the sauce to one side.
3. Using the can from the coconut milk fill it up with the rice and place in a saucepan, now fill up the can with boiling water (be careful not to burn yourself!) and cover the rice. Now add the coconut cream to the pan. Give it a stir and cook on medium heat but give it a stir every 5 minutes, as you don't want it to stick to the pan.
4. Whilst that is cooking place the quorn chicken in a pan with a drizzle of oil, heat through. Now add the sauce and cook for about 10 minutes on low heat.
5. Now check the rice and you'll know the rice is cooked when you start to see little bubbles on the surface. This means all the water has absorbed into the rice and it should be cooked. 
6. Serve straight away and enjoy!


Tips -
  • You can add peas or kidney beans to the rice for a bit of colour. I have mine with a side of vegetables, like green beans and broccoli.
  • If you are cooking this with meat make sure its cooked through before adding the sauce to the pan.

Things I Love - Picks Of The Week

This weeks picks are things I'm loving right now -

3. You know its Easter when the Creme Eggs are on sale. Look out for a yummy recipe this week!
4. I love watching the Katy Perry movie and I cry every blooming time haha!

This week I plan to do some baking, apply for an exciting job (fingers crossed), try not to get annoyed with our loud neighbours and do some more crafting.

This past weekend it snowed and I think everyone is getting annoyed here in the UK because we cant see Spring coming anytime soon. 

I had my siblings Josh and Tilly-Bluebell stay over Saturday night which was fun. Sunday we went to my best friends house as it was her daughter Mia's 2nd birthday. We stayed for a couple of hours and it was wonderful to see all the kids playing and enjoying themselves. I gave Mia a tutu skirt and a handmade heart brooch which I think she loved.

Overall our weekend was a fun one for sure :)

Google Reader is going to be shutting down on the 1st July if you didn't know the news already,  I would so so love my wonderful readers (that's you) to follow me over on Bloglovin if you haven't already done. If you use Google Reader to follow my blog I recommend switching over as soon as you can :)

Its ever so easy to do the switch over, there will be an option once your logged into your Bloglovin account at the top of the page. Within 60 seconds you'll have all the blogs your following on Blogger onto your Bloglovin feed. 

For me Bloglovin is much simpler and quicker way for me to use and it will be for you too. Instead of scrolling through all the posts you get a quick title, photo and opening paragraph for each post. That way it's easier to find the posts that you want to read on a day to day basis. The other thing I'm LOVING is when you click on the post you want to read it takes you straight to the blog! Woo!

Today I went to one of my best friends house Keri-Anne to help do a bit of spring cleaning and spend time with her girls. I stepped outside to make my walk to her house to find it was trying to snow again, I give up waiting for spring...its not coming haha! I had a moment of panic thinking about our wedding day, i really hope the sun is out for out of June. Arghhhhhh!!

Tonight Paul and I are having a date night at home with Chinese food, a bottle of wine and a movie. Looking forward to spending time with my love this weekend. I have Keri-Anne's little girl Mias 2nd birthday party this coming Sunday. Its crazy to think how quick 2 years goes, i remember the day Keri-Anne told me she was pregnant and watching her bump grow!

World Downs Syndrome Day

Today is the day to celebrate World Downs Syndrome day and I made sure I was staying at my parents last night so I was up this morning for Alfie's special day. If you didn't see my post about my brother Alfie check it out here. I posted the picture below on Instagram, Facebook and Twitter and it was lovely how many people re-posted and celebrated with us. Thank you for everyone's support! Roll on next year and I think my parents, Paul and I are going to get matching tattoos to always remember this day! I love you Alfie!

Wedding Planning - Part One

As soon as Paul and I got engaged we didn't want to wait around about setting our date. We got engaged August 2011 a day after my birthday and we wanted to give ourselves enough time to prepare for our wedding. Both of us thought 18 months to 2 years would be enough so we came up with our date. I then went ahead in September that year and booked our wedding date of the 28th June 2013. I was so excited I called Paul on my lunch to say i'd booked the date we wanted and he was thrilled!

The next thing we wanted to do was to put together a list of who we would like to invite, both Paul and I don't have big families & with a limited budget this was going to be a small wedding regardless. Once we figured out who we'd like to invite we sent out our "Save The Date" reminder's mid 2012 and started putting ideas together ideas for our wedding invitations. 

A friend of ours who works as a printer was able to help with our invites, we knew roughly what we wanted but with his guidance we put together the invites and menu's over a period of a few weeks and they came out just how we wanted. I was so happy with the turn out I put a sneak peek picture up on my Instagram to then find out we had a spelling mistake! One of our friends commented saying 'Please don't hate me but..' I laughed as I knew straight away what it was. All was fixed and we had our corrected menu updated! Woo! 

Paul and I then spent one evening putting together our day and evening invites to send out to family & close friends. One thing I will recommend is if you have guests that will be traveling from a far, staying overnight is to put together a list of hotels & B&B's for them to check out that are close to the venue. Family & Bridesmaids have been given the option to stay with us the night of the wedding at the location of our wedding reception. 

Our wedding planner Caroline has reserved all of the rooms so no one else can book them on our date, to make it easier to book we printed off the room details we thought would work best for each person/couple supplying the room type/number. They then simply need to call Caroline with the information supplied and confirm they are part of the wedding party, she will also have a list to check them off. We also put together a map with directions so guests know how to get from the registry office to the wedding reception.

From memory we sent our ''Save The Dates'' approx 6 months before sending our invites with a RSVP date of 3 months before our wedding day, believing this would allow for sufficient time for our guests to respond. We have since extented this by 2 weeks via text due to a few friends not responding though having mentioned previously in passing they would be attending. 

As you can imagine this can be quite frustrating as we had spent the time organising these and would hope a written response would be recieved, obviously not all guests would be able to attend so we have received a few that have been declined but we are still waiting on 5 RSVP's... Mainly from Paul's work colleagues/friends that could simply hand them back to him. HAha

So from our experience here are a few things to keep in mind -
  • Save the Dates 12/18 months in advance.
  • Proof read, spell check, ask a friend & double check spelling before printing RSVP's
  • Invites sent 3/6 months with clear RSVP dates including Accomadation, Map/Directions & SAE (though we run out of stamps)
  • Menus included to take into consideration dietary requirements - veggie/vegan or carnivore, gluten/dairy free & child options etc

I've been super busy job hunting and cleaning the house today. I managed to have a sit down and have a bit of me time to pick out my 'things i love' for this weeks picks. I've dressed myself up in a pretty summer dress to try and brighten my day up, the weather outside is still cold. Where is the Spring weather?! This time last year it was warm and we were able to walk around with no jacket. Its crazy how much the weather is changing each year and its hard to figure out what to wear. Mine being dresses everyday, with or without tights!

This evening I'm planning on having a nice relaxing bath and then make a few things for a friends little girls birthday. I also need to go through my RSVP's that we've had back and see how many people are actually coming to our wedding. Exciting stuff!

A Cheeky Treat - Chocolate Drop Raspberries

Hello dears!

I'm trying to eat more healthy these days with the wedding coming up soon but i still get that urge to eat a few chucks of chocolate. I have a terrible sweet tooth but also love the sourness from fruit so i came up with this idea after multitasking eating chocolate drops and raspberries. I found myself putting the chocolate drops in the middle of the raspberries and the sweet treat in your mouth together is wonderful. This idea has probably been done before but i thought I'd share with you just in case you haven't. These would be great for dinner parties, girls night or on a wedding dessert table. Simple and sweet!

What you'll need -

Fresh raspberries about 150g (Depends how many you want to make)
Dark chocolate drops 100g
White chocolate drops 100g
 





1. Firstly wash your raspberries, drain off excess water and then pat dry carefully with kitchen towel.
2. Get 2 chocolate drops and stuff each raspberry, alternating between the two flavours.
3. Get yourself a pretty bowl and serve to your guests or just indulge all to yourself.
A perfect simple snack or treat. Enjoy!

This post has come to you a little late due to having a power cut today so i do apologize! It was a nightmare as i was half way through baking cupcakes with a friend. It only took nearly 5 hours for the engineer to get the whole street back up and running. Frustrating to say the least! Did my fellow readers have a fun St Patricks Day/weekend? DIY - Pretty Kitchen Utencils

For Mothers Day i wanted to do something for my Mum that had a DIY feel to it so i decided to buy some wooden kitchen utensils and paint them. I thought I'd share with you what i did with a step by step guide.

1. Get yourself some wooden utensils, you can get them in most supermarkets or cook shops. Gold spray paint, a choice of colour waterproof paint, a paint brush and newspaper.

2. Spray some of the gold paint into a bowl and paint the ends of the utensils. I painted them just below the small hole so they were all even or you could use masking tape for an even line. I did 2 coats of paint, making sure they were all evenly coated.

3. Let them dry but make sure there not touching anything (see pic). This took about 10 minutes for them to be completly dry.

4. Now paint from the gold line downwards, using one way strokes painting 3/4 of the handle. You should only need 2 coats of the paint and leave to dry between each.

5. Make sure they're all even and your happy with the turn out.

6. To make them extra special add ribbon or lace to tie around all 3 and present them in a gift bag.

My Mum loved them and they went well with her shabby chic style kitchen. I loved how they turned out for my first attempt and i cant wait to make my own to go in my kitchen.

Today has gone quick and I've been a busy bee this morning with house work ad sorting yet more bits to go on eBay. I had my lovely friend and bridesmaid India come over for tea and cake. We decided we are going to be baking cakes tomorrow afternoon and going to try our luck at making macaroons. I'm a bit nervous about making these!! Any tips?

Pinterest Weekly - Bake Days

This week I've chosen my favourite bake recipes I'm wanting to try as soon as it starts to get warmer. I love baking as i enjoy trying new things, creating my own recipes and playing with fancy decoration.

The name says it all! Yummy!

I have to say baking is one of my favourite hobbies to do for sure. I love filling my house with fresh bakes and sharing them with friends and family. A good cake brings us together hehe!
Do you have a favourite cake? Or does your family have a baking tradition?

Today has been miserable outside as its been raining all day. I didnt look that bad until Paul and I had to venture outside to go to the post office. We've been selling a few bits on eBay and most of them sold last night. Tonight we plan to enjoy a good movie with some Ben & Jerry's - Peanut butter me up flavour. I saw one of my IG followers post a picture of this and it looks amazing!! Anything with peanut butter in i love. I normally get Half Baked which is brownies and cookie dough for treat night but i can see this being my new fave :) 

I also plan on crafting a few things and get back into doing more crafts a few times a week. I'm usually one that is forever making and coming up with new ideas. I seem to have stopped the last few weeks and i don't like it!
