Bake Days - Gluten Free Chocolate Cake

Hello dears!

I haven't made a chocolate cake in ages and was really looking forward to baking this one. I baked it once before and it turned out delicious so I thought I'd share with you. It has a firm yet fudge like texture, almost like a brownie.

Here's what you'll need -

200g (7oz) butter (I use Pure soya)
200g (7oz) dark chocolate
175g (6oz) caster sugar
4 large eggs (free range or organic)
2 tbsp ground almonds

1. Preheat the oven to 180c/fan 160c. Line a 20cm/8 inch round cake tin with nonstick baking paper.
2. Melt the butter and chocolate in a bowl set over a pan of simmering water, make sure the bowl doesn't touch the water. 
3. Once that has melted, add the sugar and stir occasionally with a wooden spoon until the sugar has dissolved.
4. Let the mixture cool a little before adding the eggs one by one, mixing well between each egg. Then add the ground almonds and mix until smooth.
5. Pour the batter mixture into the prepared tin and bake for 20-25 minutes, until the centre is set but still a little wobbly.
6. Turn off the oven but keep the cake inside for another 10 minutes, then remove from the oven and let it cool completely.
7. Remove the cake from the tin, then wrap in clingfilm and store in the fridge. Take it out about 1 hour before serving. Serve in generous slices with a little whipped cream!
