Bake Days - Peanut Butter & Jam Cookies


My husband loves anything that consists of peanut butter and has been nagging me to make him some more of these ones I made so I decided to try something new.  After browsing Pinterest I came across these ones and wanted to give them a go.

What you'll need -

Makes 9

1 free range egg
1/2 cup smooth peanut butter (or crunchy if you prefer!)
1/4 cup dark brown sugar
1/2 tsp gluten free baking powder
1/4 tsp vanilla extract
a pinch of salt
5 tbsp good quality jam, I used strawberry flavour


1. Preheat oven to 180c and grease a baking tray then place to one side.
2. In a large bowl, combine the egg, sugar, peanut butter, vanilla extract, baking powder and salt. Stir until all combined and it forms into a firm dough.
3. Using a measuring tablespoon, measure out the dough for each cookie and place on the prepared baking tray. Do this until all the dough has been used up.
4. Make a small divert in the centre of the cookie with the back of the measuring spoon, be careful not to go too deep.
5. Scoop 1/2 tsp of your chosen jam and place into the middle of each cookie hole.
6. Bake in the oven for 10-12 minutes until they appear brown and cracked then remove from the oven. Let them cool for 10 mins on the baking tray and carefully transfer to a wire rack, cool for a further 10 mins.
7. Serve with a glass of cold milk and enjoy the warm gooey cookies! Nom!

These can be stored in a airtight container for up to 3 days but I don't think they'll be around for long!
