Bake Days - Vegan chocolate fudge brownies


Today I'm sharing with you a very simple way of making chocolate fudge like brownies that are vegan and gluten free. I always find myself baking vegan recipes when I have no eggs in the house and to be honest these were the best vegan brownies I've ever made! They have the melt in your mouth crumbly gooey sponge with the crisp top. Mmmm! If you prefer your brownies a little more solid you'll need to cook them longer than the recommended time.

Here's what you'll need -

2 cups gluten free plain flour
2 cups golden caster sugar
3/4 cup of unsweetened cocoa powder
1 tsp gluten free baking powder
a pinch of salt
1 cup water
3/4 cup of vegetable oil
1 tsp vanilla extract

Prep time 15 mins
Cooking time 25-30 mins
Makes 9-12 squares depending on cut size.


1. Preheat your oven to 180c, then grease your baking tin with a little butter and pop to one side.
2. In a large bowl, stir together the flour, sugar, cocoa powder, baking powder & salt until all combined. Add the vanilla, part of the water and vegetable oil stir into a smooth paste. Keep alternating between the water and vegetable oil until all has been added. It should appear like runny chocolate once all combined.
3. Transfer the batter into the prepared tin and bake for 25-30 mins or longer if you want a firmer brownie. It should be ready by the time you see cracks appear on the top. Leave to cool in the tin for 10 minutes. Transfer to a wire rack and cut into squares.

By far the BEST vegan brownies to make at home! You could add walnuts if want something with a little crunch or add some glacier cherries for a sweeter texture. Enjoy by itself or with a scoop of vanilla ice cream.
