Bake Days - Banana & Coconut Fritters

Hello my loves,

I'm sharing a recipe with you of some yummy little balls of delight that I made the other day. I fancied something sweet and noticed I had some left over bananas that needed eating so I filtered through all of my baking books but couldn't find anything and then came across this recipe online. I gathered together the rest of the ingredients that I already had in my store cupboard.

Ingredients you'll need -

125g plain flour, sifted
1 tsp baking powder
75g golden caster sugar, plus extra for sprinkling
25g desiccated coconut
Pinch of salt
4 ripe bananas, peeled and mashed (about 400g flesh in total)
Vegetable oil, for frying
(The original recipe has zest of lime but I left that out because I simply didn't have it)

1. Firstly, sift the flour and baking powder into a large bowl. Stir in the sugar, coconut and a pinch of salt. Stir in the mashed bananas into the dry ingredients, a bit at a time until it is all well combined. Next cover the batter with cling film and chill in the fridge for about 15 minutes.

2. Fill a medium sized saucepan one-third full of oil and place on medium heat, or until a cube of bread dropped in the oil sizzles and turned golden in 30 seconds.

3. Using a tablespoon, carefully drop about 3-4 spoonfuls of the batter into the hot oil and fry for 2-3 minutes or until golden brown on both sides and cooked through. (I used another spoon to help place the batter in the oil)

4. Lift out with a slotted spoon, place on kitchen paper to drain off any excess oil, and repeat with the rest of the mixture.

Once all your fritters are done, place in a large bowl and serve hot with a sprinkle of sugar. The perfect amount of crisp on the outside, light & fluffy in the middle. Melt in the mouth goodness!

Things I Love - Picks Of The Week

I'm going on my first ever hen weekend (I don't include my own) on the 25th April and seeing as I haven't done a weekly 'Things I Love' post for ages, I thought this would be a good round up of the outfit I'm thinking of getting.




1. here I've been lusting after the Hell Bunny flamingo dress for absolutely ages so I'm finally stalking a few on eBay! Keeping all my fingers crossed I get one!

2. here The super cute shell bag I've loved for a while and I think it'll go well with the outfit. Its the perfect size and would go nicely with a few other dresses I have.

3. here The shoes are from a favourite online store but I doubt I'll be able to get them in time for the hen weekend. Would any of you ladies know a website you could recommend in the UK that would have something similar?

As I'm not sure what the weather is going to be like in a few weeks time, I'll be wearing a fitted cream cardigan just in case its chilly. Though saying that I always wear a fitted cardigan with all my dresses.

Evening my lovely readers!

It's been a while since I've been able to post anything and I just want to say a huge "Thank You" to all my loyal readers for being patient with me. I/we have had to make lot's of changes recently and it got the better of me meaning my posts suffered.

In the last few month's we've had financial troubles meaning we had to change our daily routines. This resulted in us nearly loosing our home, we lost friendship's, gained friendship's but we have weathered the storm and now finally both have new job's (yay!) and look to get back on track.

To start off this new month I've gathered together photos I've took over the last few weeks.

1. My bargain purchases I got at Home Bargains! Both for £5!

2. My Grandma and I visited a new French cafe that's opened up in my town. Their hot chocolate is amazing!! (Adore the mug it came in too!)

3. My sister Bluebell loves staying at our home and has found a liking to my Hello Kitty glasses!

4. It was my Mamas birthday back in February so I made her a red velvet birthday cake with vanilla butter cream, pink edible glitter and pastel sprinkles! Nom!

5. Having our dear friends Claire & Mark visit is always fun and we went to our favourite vintage shop that has the cutest cafe! Just how cute are these S&P chefs :)

6. Oh you know..just a photo of me! The weather has been all over the place lately so I wore my vintage yellow dress I purchased from the Oh So Lovely ladies last year to cheer me up! :)

7. My sweet little Sookie who I love dearly and she's been so clingy lately and I kinda love it.

8. I received the most kawaii package from my pen-pal Amme! I mean, how amazingly cute is that mermaid tank top?! I love having awesome pen-pals and wish more of us would write letters to one another.

9. This may be the best hot chocolate I've ever bought! Not only is it a liquid hot chocolate but its also vegan and low in calories! You can also drizzle this on your porridge or fave fruit! Yum!

10. Feeling the warmth on my skin recently has been so lovely. Can't wait for more days like these so I can wear dresses without tights on.

11. Paul & I went to a pretty colourful art exhibition in our town where they created a Wonderland from colourful sand. Amazing!

12. White blossom blooming everywhere right now, hello Spring!

13. Every single morning we have this cute face staring at us to get up! Who needs an alarm when you have a Sookie ;)
