Bake Days - Banana & Coconut Fritters

Hello my loves,

I'm sharing a recipe with you of some yummy little balls of delight that I made the other day. I fancied something sweet and noticed I had some left over bananas that needed eating so I filtered through all of my baking books but couldn't find anything and then came across this recipe online. I gathered together the rest of the ingredients that I already had in my store cupboard.

Ingredients you'll need -

125g plain flour, sifted
1 tsp baking powder
75g golden caster sugar, plus extra for sprinkling
25g desiccated coconut
Pinch of salt
4 ripe bananas, peeled and mashed (about 400g flesh in total)
Vegetable oil, for frying
(The original recipe has zest of lime but I left that out because I simply didn't have it)

1. Firstly, sift the flour and baking powder into a large bowl. Stir in the sugar, coconut and a pinch of salt. Stir in the mashed bananas into the dry ingredients, a bit at a time until it is all well combined. Next cover the batter with cling film and chill in the fridge for about 15 minutes.

2. Fill a medium sized saucepan one-third full of oil and place on medium heat, or until a cube of bread dropped in the oil sizzles and turned golden in 30 seconds.

3. Using a tablespoon, carefully drop about 3-4 spoonfuls of the batter into the hot oil and fry for 2-3 minutes or until golden brown on both sides and cooked through. (I used another spoon to help place the batter in the oil)

4. Lift out with a slotted spoon, place on kitchen paper to drain off any excess oil, and repeat with the rest of the mixture.

Once all your fritters are done, place in a large bowl and serve hot with a sprinkle of sugar. The perfect amount of crisp on the outside, light & fluffy in the middle. Melt in the mouth goodness!
